My St. Paddy’s Day Feast ~ Corned Beef and Cabbage
by Rebecca E. Parsons
So we have had a wonderful day just kickin’ back and watching a multitude of shows about Ireland. What a joy it has been for us…although HIMself will not be dancing the jig (he just got his cast off yesterday)…I will probably kick up my heels a tad. I love to dance to Irish music.
So I was busy, busy cooking our traditional feast of corned beef, cabbage and red potatoes…and Irish Soda Bread!!!

I cook it in a pressure cooker. The cabbage and corned beef go in first and cook for about 50 minutes. Then I add the potatoes and cook again for another 25 minutes. I use only mustard seeds as spice.
