Today, I am playing with the Wayfair Homemakers. We are grilling up some great summer fun called BBQ Bites. I decided to contribute dessert as my Grilled Strawberry Cake Torte is one of my favorite show-stoppers when entertaining outdoors. Plus, it is so easy to make.
Grilled Strawberry Cake Torte
What makes this so special are the ingredients. The pound cake can be made or purchased for a quick turnaround. The strawberry glaze is a signature recipe of mine with a secret ingredient. (See recipe below.) The creamy filling is made from strawberry cream cheese and strawberry Greek yogurt mixed together. Actually, you can make this with any fruit that is available. Strawberries complete the list.
Fire up the grill to medium heat. Once hot, place slices of pound cake on grates and grill about 1-2 minutes per side. Keep a close eye on them as they can burn quickly. You only want to turn them once for those beautiful grill marks.
Recipe
Ingredients for strawberries and creamy filling
1 vanilla pound cake, sliced into 1/2″ pieces
2 quarts strawberries, chopped (reserve some for garnish)
1/2 Cup sugar poured over cut strawberries
2 tubs of strawberry cream cheese
1 small strawberry Greek yogurt
Cake Prep: Slice cake and grill according to directions above. Test your grill to see if you need to add cooking spray first.
Strawberry Prep: Place chopped strawberries in plastic bowl and sprinkle sugar over them. Stir until all strawberries are coated. Place in fridge overnight. This will create delicious strawberry juice for glaze recipe.
Creamy Strawberry Filling Prep: Combine cream cheese and Greek yogurt until blended. Place in fridge overnight.
Ingredients for Strawberry Glaze
2 cups strawberries, chopped
1/3 cup sugar
2 tablespoons juice from strawberries above
1 tablespoon cornstarch
2 tablespoons almond extract
Directions
Combine strawberries and remaining ingredients in a saucepan. Bring to a boil. Reduce heat to medium low; cook 3 minutes or until desired thickness. I make mine like very thick syrup bordering on jam. Remove from heat and stir in extract. Cool. Strain through a sieve over a bowl; discard solids. Place in glass canning jar. Refrigerate.
Assembly
Lay a slice of grilled cake on serving plate. Spread a layer of glaze. Place a few strawberries on glaze. Spoon a large dollop of creamy filling over the berries. Arrange a few strawberries on top. Top with another slice of grilled cake. Garnish with strawberry. Repeat. May be stored in refrigerator for a few hours before serving.
This is really quick and easy. It can be made with frozen berries and serves without the overnight wait. You can also cut a piece in half and eat like a sandwich. That is good for smaller appetites too.
