Quick Brunch Strata w/ Garlic Wine Sauce for Family Game Night Fun #DipDipHooray

Oh my goodness…this is one of the most fun times I have had in weeks. I was challenged to come up with some Heinz®, Tyson®, and Ore-Ida® creative meal solutions. My mind went into overdrive as soon as I learned of the ingredients – Heinz Ketchup, Tyson Chicken Nuggets and Ore-Ida Golden French Fries. Well, you might think of dinner or lunch…but not me. I thought immediately of breakfast or brunch.

The second part of this challenge was to throw a family game night with Hasbro games – Hasbro Game Night. Well, around here it has always been Parsons’ Sunday Fun Day! So I decided to make this one really memorable with an all out Hasbro game challenge Brunch of Champions.

Now what family does not own a Hasbro board game or Hasbro Wii game? You know you love Clue, Yatzee, Candyland and Jenga. And the game of LIFE is just plain awesome. Plus Scrabble has helped my children and I get through many a cold night!!!

When I saw the Wii version of our favorite board games at Walmart, I had to see how you could play them on the television. While I prepped the food, HIMself loaded the games and reviewed the how-sort of. A strata is what I am making, sort of. And you are supposed to assemble it ahead of time and let it sit (and become well marinated) overnight. That’s a good thing because you get up on family fun day and pop it in the oven. Add fruit and orange juice and you have a great meal.

The next morning, while the brunch casserole baked…we played, and played. The Wii version of our favorite games is way cool!!! You need to try them…you will be hooked!!!

After all that playing we were H U N G R Y…so we took a break to enjoy our brunch. On the menu is Quick Brunch Strata with Garlic Wine Sauce, fresh fruit, pretzels, veggie chips and fresh-squeezed Florida Orange Juice. It is so much fun sending HIMself out into the yard to pick oranges for juice!!!

H+O+T Brunch Casserole (Heinz+Ore-Ida+Tyson)

This is a fairly easy dish to prepare. Prep time is about 20 minutes and the ingredients can and should be made the night before, assembled and allowed to meld in the refrigerator overnight. It always makes a big splash when I serve it. I was excited to see if I could adapt it for the ingredients I was challenged to use – chicken nuggets, french fries and ketchup!!!

I love it because it has everything in one dish – protein, veggies, potatoes, and even biscuits. That’s right…it’s all in there in one amazingly delicious, soft and fluffy casserole. I call it my “One Dish Wonder.” It is my go to dish for covered dish events. I have even turned it into a dessert. (I will share that recipe in another post.) You can use almost any kind of meat and veggie you have on hand. This recipe is adapted from Betty Corcker’s Impossibly Easy Breakfast Bake http://www.bettycrocker.com/recipes/impossibly-easy-breakfast-bake-crowd-size/b9412093-eaf2-46fd-bc9e-967ae7af7b6c and Better Homes and Gardens’ Bacon-Asparagus Strata http://www.bhg.com/recipe/casseroles/bacon-asparagus-strata/.

INGREDIENTS

1/2 package frozen Tyson Chicken Nuggets (cut in small pieces)
3 cups frozen Ore-Ida Golden French Fries (cut and chopped)
1-9 ounce package frozen cut asparagus, thawed and well-drained
Enough butter or olive oil to saute onions and nuggets
1 bunch green onions, chopped (approx. 1/2 cup)
2-1/2 cups shredded cheese (8 oz)
1-1/2 cup Original Bisquick® mix
2-1/2 cups milk
1/4 teaspoon pepper
8 eggs (beaten)

TECHNIQUE

Heat oven to 400°F. Coat a rectangular baking dish (13 x 9×2 inches) with cooking spray. Place chicken nuggets in skillet and sprinkle seasoning mix over the chicken. Stir and cook over medium heat for 5 minutes. You might need to add more butter or oil so the mixture does not stick. Line bottom of baking dish with potatoes. Stir Bisquick mix, milk, pepper and eggs until blended. Pure half egg mixture over potatoes. Sprinkle 1 cup of cheese over this. Top with asparagus, green onions and 1 cup of cheese. Stir this mixture slightly with spoon. Do not over do this. Top with remaining egg mixture.

Bake uncovered 40 to 50 minutes or until knife inserted in center comes out clean and it is puffy. Sprinkle with remaining cheese. Bake 1 to 2 minutes longer or just until cheese is melted. Cool 5 minutes.

NOTE: You can substitute any meat or veggie you like in this recipe. They ALL taste good. I have used ham, bacon, sausage, tuna and all the veggies you can think of. I usually use what I have on hand. I always make a veggie one for my daughter!!!

Garlic Wine #DipDipHooray

INGREDIENTS

1/2 C Heinz Ketchup
1/2 C Heinz Balsamic Vinegar Ketchup
Ground Cloves to taste
1 pkg. McCormick Garlic Wine Marinade (I used about 1 tablespoon give or take)

TECHNIQUE

Just mix them together until you love the taste. Serve with anything!!!
