Updated/Reshare Grilled Chicken Caesar Salad – easy recipe idea for the 4th of July.

OMG…this recipe from Kraft is such an easy way to celebrate the 4th with style. I love to browse www.kraftrecipes.com for ideas. Most of the recipes are affordable to make and are good tasting as well. What I love about Kraft is they give you the recipe, show reviews, nutrition information and hints and tips plus alternative ways to prepare the dish. See the recipe below>>>

List in hand, I headed to the grocery to pick up the ingredients for a super 4th of July supper. It will just be the two of us this year…so we decided to eat healthy and light. We didn’t need too much since it is just us. We headed to the produce aisle to pick out salad greens. They were beautiful…we picked Romaine lettuce, tomatoes, onions and fresh parsley.

We headed to the bakery to get the Italian bread I love to grill. It only costs $1.50 for a loaf large enough for 10 good size pieces. I also picked up a package of chicken breasts.

We picked up Kraft Caesar Dressing, Kraft Parmesan Cheese, Kraft Italian Dressing and some olives!!! Since it is just us, we will have anchovies on the salad as well…yummy for us!!!

Of course, we picked up a small watermelon, some corn on the cob and my new favorite drink–Clear American Sparkling Water (Black Cherry for me and Key Lime for hubby). We also bought a small poundcake, some fresh berries and some frozen yogurt for dessert. All done for now!!!

At home we unpacked and started the prep. Hubby cleaned the corn while I cut up the chicken. I  put the chicken in the fridge to marinate.

Thirty minutes later, I skewer the chicken while Mike fires up the grill. He slices the bread and minces the garlic too.

We grilled the skewers and olive oil coated bread…YUMMM!!!

It was a relaxed meal on the lanai. Happy 4th!!!

Grilled Chicken Caesar Salad Recipe

4 servings ~ recipe from Kraft Foods

INGREDIENTS

1/2 cup KRAFT Classic Caesar Dressing, divided
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
4 thick slices Italian bread
1 clove garlic, peeled, cut in half
1 Tbsp. olive oil
6 cups torn romaine lettuce
3 Tbsp. KRAFT Grated Parmesan Cheese

DIRECTIONS

POUR 2 Tbsp. dressing over chicken in shallow dish; turn to coat chicken with dressing. Refrigerate 30 min. to marinate.

MEANWHILE, heat grill to medium heat. Thread chicken onto 4 skewers. Grill 6 to 8 min. or until done, turning occasionally. Add bread to grill; cook 1 min. on each side or until toasted on both sides. Rub toast with garlic; brush with oil.

ARRANGE toast and lettuce on platter; drizzle with remaining dressing. Top with chicken skewers and Parmesan.

SUBSTITUTE

Substitute KRAFT Ranch Dressing for the Caesar dressing.

VARIATION

Substitute 2 hearts of romaine, rinsed and cut lengthwise in half, for the torn romaine. Grill 1 to 2 min. or until romaine is slightly wilted and marked with grill marks, turning occasionally. Place on cutting board. Cut off core ends; discard. Cut lettuce into slices; place on center of platter, then continue as directed.
